Soups! Especially this time of year, soups are a nourishing way to fill ourselves up with a delicious and enriching meal. For creamy soups, try coconut milk, pureed potatoes or cashew cream; for vegetable soups, make or use a vegetable stock and fill it with all kinds of goodies. Soups are also great to improvise: add pasta, frozen peas or corn, rice or barley, sauteed vegetables, beans, fresh herbs, tempeh "croutons" and more.
